CHICKEN SAUCE PIQUANTE | |
1 chicken, cut into serving pieces 1 small can tomato paste 2 tbsp. flour 1/4 c. oil 1 onion, chopped 1 bunch green onions, chopped (use tops and bottoms) 2 cloves garlic, minced 1/2 bell pepper, chopped 1/2 c. parsley, minced 1/2 tsp. red pepper salt and pepper to taste Brown chicken in oil, remove chicken, add onions, green onions, green pepper and garlic to pan and brown. Sprinkle flour over onions and stir, add remaining ingredients and chicken. Cover with water and cook until chicken is done, about 1 hour. I debone and skin mine before serving, but you don't have too. Serve over rice. Better the second day! |
