WHOLE WHEAT APPLE FRITTERS | |
Delicious with vanilla ice cream or low fat frozen yogurt! 1 green apple powdered sugar (for sprinkling) enough frying oil to allow fritters to float BATTER: 1 cup whole wheat flour 4 tsp. baking powder 2 tbsp. ground cinnamon 3 tsp. sugar 1 tsp. salt 1 egg 3/4 cups milk 1 tbsp. melted butter Sift together flour, baking powder, cinnamon, sugar and salt. Add egg to small bowl and whisk lightly, then add the milk and whisk until egg is floating equally through the mixture but not completely mixed in. Add this to the dry mixture and mix until well blended. Melt the butter, and add this lastly. Preheat fryer, or large pot to 375°F; containing enough oil to allow fritters to float. Peel, or partially peel, or leave skin on apple, whichever you prefer. And then chop into medium dice. Add apples to the mixture. Use a tablespoon to drop spoonfuls of the mixture into the hot oil. Cook for about 3-4 minutes. Be sure to flip halfway through cooking to ensure both sides get cooked evenly. Remove them when they're golden brown. Tip: Taste the first batch to see if they are the consistency you like. If they're not crispy enough you may add a little more baking powder. Or if they are too crispy you may add a little more flour. The correct consistency is so that the mixture doesn't completely cover the apples, some of them will be showing and the dough should look sticky and stretchy. Add paper towels to a plate and place cooked fritters on the paper towel to drain. Sprinkle with powdered sugar and serve warm! Submitted by: Katrina |
