SWEET FRIED PUFFS 
1 c. water
1/2 c. butter
4 tsp. sugar
1/4 tsp. salt
1 c. flour
4 eggs
Vegetable or cooking oil
1 c. sugar
2 tsp. cinnamon

In medium saucepan, combine water, butter, 4 teaspoons sugar and salt. Bring to boiling, stirring until butter melts. Add flour all at once; cook and stir over low heat until mixture forms a ball that does not separate. Remove from heat; cool 10 minutes. Vigorously beat in eggs, one at a time, until mixture is smooth and shiny.

In large skillet, heat 1 1/2-inches oil to 375 degrees. Drop dough by rounded teaspoonfuls into hot oil; fry a few at a time about 4 minutes or until golden brown, turning as needed. Drain on paper towel. In plastic bag mix 1 cup sugar and cinnamon. Shake warm puffs in sugar mixture to coat. Makes about 40.
