SOY BEAN COOKIES (Diabetic) 
2 eggs
1 tsp. salt (level)
1 tbsp. melted butter
4 walnuts in sm. pieces
1/2 c. cream
1/2 c. water
1 1/2 c. soy bean flour
2 tsp. baking powder

Beat eggs well. Add salt and walnut pieces. Mix together. Mix flour, baking powder and sift, adding it to the cream and water. Bake in hot oven in butter cupcake pans. Makes 8 to 14 small biscuits. For sweet biscuits add little saccharin.
