DANISH RED CABBAGE 
1 med. head red cabbage, finely cut or sliced
2 tart green apples, peeled and cut up
2 tbsp. butter
1 med. onion, sliced
1 qt. water
1/2 c. red wine vinegar
1/2 c. sugar
1/2 tsp. salt
1/4 tsp. pepper
2 cloves
1 bay leaf
Juice of 1/2 lemon

Heat butter in large saucepan, saute onion and apples for 3 to 4 minutes. Add water, vinegar, seasonings and bring to a boil and add cabbage. Cover and simmer for 45 minutes, or until tender. Use a slotted spoon to serve.
