POLLO CARLO 
4 oz. boneless, skinless chicken breast
1 tsp. vegetable or sunflower oil
1 clove fresh garlic
1/4 c. minced sm. onion or chives, etc.
2 sliced med. size mushrooms
2 oz. wine, white or red or marsala
1/2 c. fresh cubed tomato
2 leaves of fresh basil
Fresh black pepper to taste
1 tsp. butter

Cut the chicken breast into strips. Brown broken garlic clove in oil, medium high (discard garlic). Brown both sides of the chicken strips and add onion and the mushrooms, cook until onions are partially transparent. Add remaining ingredients. Cook to proper doneness of the chicken strips, then add the butter and serve.
