CHEESE STUFFED MANICOTTI 
6 manicotti shells
1 1/2 c. shredded mozzarella
1 c. cottage cheese
1/3 c. Parmesan cheese
2 beaten eggs
Onion to taste
Spaghetti sauce (I make my own)
1/4 c. snipped parsley

Preheat oven to 350 degrees. Cook manicotti until tender and drain. Combine 3/4 cup mozzarella cheese, cottage cheese and Parmesan. Stir in eggs, parsley and onion. Stuff cooked shells with above cheese mixture. Arrange in 10 x 6 x 2 inch baking dish. Pour sauce over all and add more mozzarella cheese on top. Bake until bubbly and heated through. Approximately 40 minutes. Serves 3.
