CHICKEN GUZMUNDO 
4 boneless chicken breasts, cut into 2" fingers
1 c. white bread crumbs
1 c. Parmesan cheese
2-3 eggs, beaten with 1/4 c. milk
2 sticks butter

Mix bread crumbs and cheese together. Dip chicken pieces in egg wash and then into crumb mixture. Heat 1 stick butter over medium heat in a heavy frying pan. Cook chicken on each side until golden. Add more butter as needed. Good served hot or cold. Does not dry out if kept in the oven.
