DIABETIC SPICE COOKIE 
1 1/4 c. water
1 c. shortening
1 c. seedless raisins
1 c. cut up dates
1/4 tsp. nutmeg
1/2 tsp. cinnamon
2 eggs
1/2 tsp. salt
1 tsp. baking soda
1/2 tsp. Sucaryl or other liquid sweetener
2 tbsp. water
1/2 tsp. baking powder
3 c. flour

Boil water, shortening, raisins, dates, nutmeg and cinnamon for 3 minutes. Let cool. Then beat in eggs; dissolve salt, soda and sweetener in the 2 tablespoons of water. Then add egg mixture. Drop by teaspoon on a cookie sheet and bake at 350°F for about 12 minutes or until done.
