DATE PINEAPPLE COOKIES
(DIABETIC)
 
1 c. raisins
1/2 c. crushed pineapple (with juice)
1/2 c. chopped dates
1 c. water
1 stick butter
2 eggs, beaten
1 1/4 c. flour
1 tsp. baking soda
1 c. chopped nuts

Boil raisins, pineapple, dates and water slowly for 3 minutes. Add butter and cool. In a separate bowl, beat eggs. Add sifted flour and soda. Add the cooled fruit mixture and nuts. Chill overnight. Drop by teaspoonfuls onto a cookie sheet. Bake at 350 degrees for 12 minutes.
