BE MY VALENTINE CAKE 
2 1/2 cups sifted all-purpose flour
1 1/2 cups sugar
3 1/2 tsp. baking powder
1 tsp. salt
1/2 cup shortening (Crisco)
3/4 cup milk
1/4 cup cherry juice (from cherries)
1 tsp. vanilla
2 tsp. almond extract
4 egg whites
18 cherries, well drained and finely chopped
1/2 cup chopped walnuts

Sift dry ingredients into a mixing bowl and add shortening. Combine milk and cherry juice in a separate cup. Add 3/4 cup of liquid to dry ingredients. Add flavorings and beat for 2 minutes. Add remaining liquid and egg whites; beat for 2 minutes. Add cherries and nuts; blend. Pour into greased and floured pan.

Bake at 375°F for 1 hour in a tube pan or 20 to 25 minutes for layers.
