SWEET POTATO CASSEROLE 
2 cups sweet potatoes cooked and mashed
1 1/4 cups sugar
1 large can evaporated milk
1/2 stick butter
2 eggs
1 tsp. vanilla

Topping:

1 cup crushed cornflakes
3/4 stick butter
1/2 cup coconut
1/2 cup brown sugar
1/2 cup pecans

Mix together first 6 ingredients and pour into greased baking dish. Mix together topping and spread over casserole.

Bake until light brown.
