6 slices bacon 1/2 c. chopped onion 1/3 c. chopped green pepper 3 eggs, beaten 1 c. half & half, can use Milnot 1/2 tsp. salt 1 c. shredded Swiss cheese 1 (9 inch) unbaked pie shell Heat oven to 350 degrees. Cook bacon until crisp; drain, reserving 2 tablespoons fat. Cook onion and green pepper in fat until tender. Combine eggs, half and half and seasonings. Mix well. Add cheese, onion, green pepper. Pour into pie shell, crumble bacon over top and bake for 40 to 50 minutes. |
