SKILLET CORNBREAD 
1 c. cornmeal
1 c. whole wheat flour
2 tsp. baking powder
1 tsp. baking soda
3/4 tsp. salt
4 egg whites
2 c. low-fat buttermilk
2 tbsp. sugar

Preheat oven to 400 degrees. In large bowl combine the cornmeal, flour, baking powder, soda, sugar and salt.

In medium bowl, lightly beat egg whites and combine them with buttermilk. Stir above into dry ingredients and mix until just moistened. Spray a 10 inch cast iron skillet with vegetable spray. Pour into skillet. Bake in oven about 25 minutes or until bread tests done with toothpick.
