CHEESY VEGETABLE CASSEROLE 
2 (10 oz.) pkg. mixed vegetable
1/2 c. chopped celery
1/3 c. chopped onion
1 c. mayonnaise
1/2 c. shredded Cheddar
1/4 tsp. salt
1/8 tsp. pepper
2 c. crushed Ritz crackers (or cheezits)
1/4 c. melted butter
1/2 c. shredded Cheddar

Cook vegetables. Combine vegetables, celery, onion, mayonnaise, 1/2 cup cheese salt, and pepper. Spoon into greased casserole. Combine remaining ingredients and sprinkle on top.

Bake at 300 degrees for 30 to 40 minutes.
