MEXICAN PIZZA | |
1 1/2 c. buttermilk baking mix 1/2 c. yellow cornmeal 1/2 c. cold water 1 lb. ground round 1 (4 oz.) can chopped green chilies 1 (1 1/4 oz.) env. taco seasoning mix 3/4 c. water 1 (16 oz.) can vegetarian refried beans 1 1/2 c. (6 oz.) shredded lowfat Cheddar cheese 1 c. shredded lettuce 2 med. tomatoes, chopped 1/2 c. chopped onion Mix first 3 ingredients until soft dough forms. Pat dough into 12-inch pizza pan. Bake in preheated 425 degree gas oven for 10 minutes. Brown meat; drain fat. Stir in chilies, taco seasoning mix and water; heat to boiling, stirring frequently until thickened, 5 to 10 minutes. Spread beans over baked crust; top with beef mixture and cheese; bake additional 10 minutes. Top with remaining ingredients and serve with taco sauce. |
