HAM SURPRISE 
4 English muffins, split in half
8 slices ham
2 egg whites
1/2 c. mayonnaise
1 c. grated cheddar cheese
2 tsp. mustard

TOPPING:

Beat 2 egg whites until stiff. Quickly fold in mayonnaise, grated cheese, and mustard.

Split 4 English muffins. Place slice of ham on each half. Cover with topping and bake 5 minutes in 450 degree oven.

This recipe makes good use of leftover ham and has always been an Eastertime tradition in the Hannan family.
