HAM AND EGGS A LA SWISS 
4 English muffins
3 tbsp. butter, softened
1/2 lb. thinly sliced deli ham
4 hard cooked eggs, sliced
1/2 c. sour cream
1/2 c. mayonnaise
1 c. (4 oz.) shredded Swiss cheese
Paprika (optional)
Sweet red pepper strips (optional)

Split English muffins; spread with butter. Toast muffins until lightly browned. Place ham on English muffin halves. Arrange 2 egg slices on each sandwich. Set aside.

Combine sour cream and mayonnaise, mixing well. Spoon 2 tablespoons of mixture over each slice of muffin; sprinkle with shredded cheese. Sprinkle with paprika, if desired. Broil sandwiches about six inches from heat until cheese melts and sandwiches are heated. If desired, garnish with sweet red pepper strips. Yields 4 servings.
