EGG AND SWISS CHEESE SALAD 
6 hard-boiled eggs, chopped and diced
1/2 lb. Swiss cheese, diced
1/4 c. scallions, chopped
1/2 c. sour cream
2 tbsp. mayonnaise
1 1/2 tsp. mustard
1 tbsp. horseradish
1/2 tsp. cumin
salt to taste
pepper to taste

Toss eggs and cheese together lightly in a bowl. In separate bowl, combine remaining ingredients; pour over egg-cheese mixture and toss gently. Serve on dark or white bread, crisp lettuce, spinach or crackers.

Serves 6.

Note: May add chopped slices of salami or pepperoni into mixture; or, if used as sandwich filling, lay slices of corned beef with it to make it a little heartier.
