TOFU "EGG" SALAD 
2 c. (16 oz.) firm tofu, mashed
1/2 c. mayonnaise
1 tbsp. Dijon mustard
1/2 tsp. turmeric
3 stalks celery, chopped
3 green onions, chopped
1/4 c. pickle relish, drained

Rinse tofu off and pat dry. Combine all ingredients and let set 2 to 3 hours. Spread on crackers or bread. Tastes just like egg salad spread.
