TOMATO RELISH 
6 c. skinned, chopped, drained tomatoes
2 c. chopped sweet peppers
2 c. chopped onions
1 1/2 c. white vinegar
1 1/3 c. sugar
2 1/2 tsp. salt
1/4 - 1/2 tsp. garlic
6-8 jalapeno peppers (less for milder sauce)

Bring all of the above to a boil; simmer for 1 hour or until tender. Place into hot jars; water bath for 10 minutes.
