BLUEBERRY COFFEE CAKE 
2 c. flour
1 c. sugar
2 tsp. baking powder
1 tsp. salt
1 1/2 tsp. grated orange or lemon rind
1/2 c. butter, softened
1 c. milk
2 eggs, beaten
1 tsp. vanilla
2 c. blueberries

Preheat oven to 350 degrees. In bowl, combine flour, sugar, baking powder, salt and rind. Cut in butter. Add milk, eggs and vanilla. Stir until well blended. Pour 3/4 batter into greased 9" pan, top with blueberries. Spoon on remaining batter. Top with streusel. Bake 35 to 45 minutes. Cool.

STREUSEL TOPPING:

1/4 c. butter
1/3 c. sugar
1/3 c. brown sugar
1/4 c. flour
4 tsp. cinnamon
1/2 c. chopped nuts (opt.)
2 tbsp. oatmeal

Combine ingredients in a bowl and crumble with fingers.

Usually my coffee cakes turn out dense enough to use as doorstops. This one is a delicious exception. Fluffy and not too sweet. Would make again!
