GLUTEN-FREE FLAX SINGLE SERVING
FLAT BREAD
 
This bread can be sliced into soft "breadsticks" after baking or eaten as a flatbread. Possibly could be used as a personal-sized pizza crust, though I haven't tested this yet. The bread is light and somewhat fluffy after it cools. Straight from the oven it will be a bit gummy inside if sliced but firms and dries when cool. I have only tested this with a toaster oven and a microwave (which I don't recommend, as it takes forever to fully cook and remains wet and gummy). Can be toasted in oven or on a grill pan coated with butter or oil.

5 tbsp. finely ground flaxseed meal/flour
1 tsp. coconut flour
pinch of salt
1/4 tsp. baking powder
warm water, enough to form a stiff dough
seasonings like onion or garlic powder (optional)

Put dry ingredients in a small bowl and whisk to combine (and to remove any lumps). Add enough warm water to form a stiff, wet dough. Using spatula or hands, fold and press the dough to ensure no dry spots remain.

Cut a piece of parchment paper slightly larger than desired flatbread size. Place the dough ball on the parchment and press with fingers to form a flat loaf about 1/4-inch thick.

Put the parchment with flatbread directly onto the rack of a toaster oven. Bake at 400°F for 30 minutes.

Remove from oven and cool on a wire rack before eating.
