CHEESY CATFISH 
2 lbs. catfish fillets
1/2 tsp. salt
1 tsp. paprika
1 tbsp. milk
3/4 c. Parmesan cheese
1/4 c. flour
1/2 tsp. pepper
1 egg, beaten
1/4 c. melted butter

Combine cheese, flour, salt, pepper and paprika in a bowl. Mix egg and milk. Dip fish in egg mixture and then in cheese mixture to coat well. Place aluminum foil in 13"x9"x2" baking dish and place fish on foil. Pour butter over fish and bake at 350 degrees until golden brown.
