"VINEGRET" ZAKUSKA (RUSSIAN) | |
4 c. boiled potatoes, diced 16 oz. can diced carrots and peas, drained 16 oz. can diced beets, drained 1 c. diced Kosher dill pickles 1/2 c. onions, diced or fine slices 1/2 bottle capers, drained 1 lb. Delicious apple, diced fine Mix thoroughly, add salt and mayonnaise, and garlic salt (optional) to taste. Not too moist. Let stand, covered in refrigerator at least 1 hour. 10 servings. Garnish with hard boiled eggs, quartered tomato wedges, parsley. (Slight pink tinge). Fresh carrots, peas and beets take longer, but are firmer and better tasting. |
