PUMPKIN LOAF | |
3 c. all-purpose flour 2 c. sugar 2 tsp. baking soda (Arm & Hammer) 1 tsp. ground cloves 1 tsp. cinnamon 1 tsp. nutmeg 1 tsp. salt 1/2 tsp. double acting baking powder 2 c. pumpkin, cooked & mashed 2/3 c. salad oil 3 eggs, slightly beaten Preheat oven to 350 degrees. Grease and flour two 9x5 inch loaf pans. With fork, mix flour with first 7 ingredients. Add what's left and mix until blended. Turn into pans. Bake at least 1 hour. Test with toothpick. Cool in pans for 10 minutes. You can cook pumpkin by placing in oven and bake for about 1 hour and 15 minutes. Test with toothpick until soft. Or you can boil pumpkin, oven method is easier, you can scoop out the pumpkin meat. (Before cooking pumpkin, scoop out seeds and string.) |
