RED CABBAGE 
1 head red cabbage, shredded
1 tbsp. shortening or bacon fat
1/2 c. vinegar or lemon juice
1 tsp. salt
1/4 c. sugar
1 onion, chopped
1 or 2 tart apples (optional)
1/4 c. currant jelly

Melt shortening, add cabbage, vinegar, salt, sugar, onion and apple. Simmer until tender about 1 1/2 hours. Just before serving stir in jelly. Serves 4 to 6.
