LIME PICKLES | |
2 gal. cucumbers, slice crosswise, 1/4 inch 2 c. lime, regular barnyard lime 5 lb. sugar 1 qt. vinegar 1 tsp. mace 1 tsp. turmeric 1 tsp. whole cloves 1 tsp. celery seed 1 tsp. mixed pickling spices 1 tsp. salt 1st day: Wash and slice cucumbers crosswise. Soak in lime water for 24 hours. Use enough water to cover. (Do not use metal pan.) 2nd day: Rinse thoroughly 2 or 3 times in very cold water. Drain. Then soak in mixture of sugar, vinegar and spices. Do not heat mixture. Let stand for 24 hours. 3rd day: Cook for 45 minutes slowly, after boiling starts. Put in jars and seal. Approximately 10 jars. |
