COCONUT COOKIES 
1/4 c. shortening
1 egg
1/2 c. milk (sour)
1/4 tsp. salt
1 1/2 c. flour
1/2 c. sugar
1 tsp. lemon juice or extract
3 tsp. Royal baking powder
2 c. fresh grated coconut

Cream shortening; add sugar, beaten egg and lemon juice. Mixing slowly, add flour, baking powder and salt which has been sifted together. Add coconut. Drop by small spoonfuls on greased pan. Do not smooth over, but allow space for spreading. Bake 15 to 20 minutes in moderate oven. Makes 2 dozen cookies.
