COCONUT COOKIES 
1 stick butter, melted
1 c. sugar
1 egg, beaten
1 sm. pkg. Idaho instant potatoes (2 oz.)
1 (5 1/2 oz.) pkg. Martha White buttermilk bix mix
1 tsp. coconut extract

Cream sugar, butter, egg and extract; blend well. Shape in ball, place in covered dish and refrigerate overnight. Take out a little at a time. Pat 1/2 teaspoon in round ball. Place on cookie sheet 1 inch apart. Bake at 350 degrees until slightly brown. Remove from pan while still warm with egg turner.
