COCONUT - POTATO DROP COOKIES 
1 med. potato, peeled and cooked
1 tsp. butter
1/2 tsp. almond extract
1 lb. pkg. confectioners sugar
2 oz. pkg. flaked coconut
Cherries, nuts

In small sauce pan cook potatoes; mash. Measure 1/2 cup into bowl. Stir in butter and almond extract. Gradually stir in sugar; mixture will be thin at first. Mix until smooth. Stir in coconut. Drop by teaspoon onto waxed paper. Top each with cut cherry or nut. When cold, pack into airtight container.
