STIR FRIED RICE CHICKEN | |
3 chicken breasts, skinned and sliced thin 1 1/2 tbsp. soy sauce 1/4 tsp. pepper 1 chicken bouillon cube 1 1/4 c. water 1 c. chopped celery 1 c. chopped onion 1 c. chopped mushrooms 1 tsp. greek seasoning 3 c. cooked rice 1 tbsp. cornstarch Stir fry in wok the onions, mushrooms, celery and 1 tsp. greek seasoning in 1 tablespoon of oil until clear, but still crunchy. Transfer to bowl. In wok, chicken on high in 1 tablespoon oil until chicken is done. Mix soy sauce, pepper, bouillon cube, water, cornstarch. Add to the chicken and simmer 6 minutes. Other ingredients that can be used are snow peas, cashews, bean sprouts and water chestnuts. These are added just before serving. |
