CARROT CAKE 
2 c. sugar
1 1/4 c. Crisco oil

Cream until light and fluffy. Add 4 eggs, one at a time.

2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt

Sift together, add to the above and beat only until mixed.

3 c. grated carrots

Fold into above (I hand grate on medium grater). Bake in 2 (9") or 3 (8") pans that are greased and floured. Bake at 325 degrees for 35 to 45 minutes.

ICING:

1 (1 lb.) box powdered sugar
1 (8 oz.) pkg. cream cheese
1 stick butter (1/4 lb.)
1 tsp. vanilla
1 c. broken nuts (Spanish peanuts)

Cream together and frost.
