STUFFED PEPPERS 
4 med. green or red peppers
1 lb. ground beef
1/2 tsp. salt (optional)
1/4 tsp. pepper
1 clove finely chopped garlic
1 sm. chopped onion
1 sm. can chopped mushrooms
1/4 c. MINUTE RICE
1 can CAMPBELLS tomato soup
1 c. shredded Mozzarella cheese

Saute ground beef, onions and garlic. Add seasonings and mushrooms. Drain. Add rice. Cut off tops of peppers and clean out seeds. Fill with beef mixture. Top with diluted soup and cover with Mozzarella cheese. Bake at 350 degrees for 40 minutes.
