POTATO CASSEROLE 
2 lbs. frozen hash brown potatoes
1/2 c. melted butter
2 c. sour cream
2 c. grated cheddar cheese
3/4 tsp. salt
1/4 tsp. pepper
1/4 c. chopped onion
1 can cream "vegetable" soup (may be mushroom, celery, or chicken); don't add water

Mix well and put in a 9x13 baking dish. Bake covered in 350 degree oven approximately 1 1/4 hours with it uncovered the last 15-20 minutes.
