FABULOUS SWEET POTATO CASSEROLE 
3 lbs. canned sweet potatoes (discard water or syrup)
1 c. light brown sugar
1 tsp. cinnamon
3 tbsp. butter
1/2 to 3/4 tsp. nutmeg
1 c. whole or skim milk
Additional 2 tbsp. brown sugar

Combine everything but the last ingredient in a food processor. Process for a few minutes until completely smooth. Put mixture in a buttered 1 1/2 quart casserole. Sprinkle additional sugar on top. Bake at 350 degrees for 45 to 60 minutes.
