MASHED SWEET POTATOES WITH
PINEAPPLE
 
2 lbs. sweet potatoes, pared and cut lengthwise in half.
5 tbsp. crystallized ginger, finely chopped
3 tbsp. firmly pack dark brown sugar
1/2 c. drained cursed pineapple packed in light syrup, liquid reserved
1/4 tsp. salt
1/8 tsp. ground allspice

Place potatoes in large pot and cover with water. Bring to boil. Reduce heat, simmer covered 30 to 40 minutes or until tender. Drain potatoes and mash in pot with potato masher. Stir in ginger, sugar, crushed pineapple, 2 tablespoons of the syrup, salt and allspice. Spoon into serving bowl. Serve hot. Makes 8 servings.
