3/4 c. cold mashed potato
4 c. powdered sugar
4 c. shredded coconut
1 1/2 tsp. vanilla
1/2 tsp. salt
8 oz. semi-sweet chocolate
Finely chopped nuts, optional

Mix mashed potatoes with powdered sugar and salt. Stir in coconut and vanilla. Press into large pan. Melt chocolate over hot water, then pour over candy quickly. Cool and cut.

Option: Sprinkle with finely chopped nut meats after spreading chocolate.
