SIMPLY DELICIOUS BROILED FISH 
8 sm. skinless, boneless fish fillets (your favorite)
1 tbsp. vegetable oil
2 tbsp. mayonnaise
1 tbsp. Dijon mustard
2 tsp. finely chopped parsley
4 lemon or lime wedges

Preheat broiler to high. Arrange fillets on baking sheet or dish (foil lined optional). Sprinkle with salt and pepper and brush with oil.

Blend mayonnaise, mustard and parsley. Brush it evenly and generously over fillets. Place fillets 3 to 4 inches from broiler and broil about 1 to 2 minutes until golden brown on top and fish is just cooked through and flaky. Serve with lemon wedges. Serves 4.
