CHICKEN SURPRISE 
3 lbs. chicken breast, cut in bite-size pieces
2 eggs
1/4 c. flour
1/4 c. cornstarch
1/2 c. water
1/2 tsp. powdered ginger
1 sm. onion, minced
1/4 tsp. pepper
2 tbsp. vegetable oil
2 tbsp. soy sauce
2 tbsp. white wine

Mix into batter and pour over chicken pieces and let stand at least 1/2 hour. Drop into deep fat and brown.

SAUCE:

1/4 c. cornstarch
1/4 c. brown sugar, packed
1/3 c. soy sauce
1/2 c. vinegar
2 c. hot chicken broth

Cook until thick and clear. Cook 1 1/2 cup rice and put on serving platter. Put the fried chicken breast over rice and pour the sauce over this. Sprinkle 1/2 cup of macadamia nuts.
