MEXICAN MANICOTTE 
1/2 lb. lean ground beef or turkey
1 c. refried beans
1 tsp. dried oregano
1/2 tsp. ground cumin
8 manicotti shells
1 1/4 c. water
8 oz. can picante sauce
8 oz. carton sour cream
1/4 c. finely chopped green onion
1/4 c. sliced pitted ripe olives
1/4 c. shredded Monterey Jack cheese

Combine turkey, beans and spices; mix well. Fill uncooked manicotti shells with meat mixture. Arrange in 10"x6"x2" baking dish. Combine water and picante sauce. Pour over manicotti. Cover with vented plastic wrap. Microwave on high for 10 minutes, giving dish a half turn after 5 minutes. Using tongs turn shells over. Microwave for 17 to 19 minutes on medium, giving dish a half turn once. Combine sour cream, green onions and olives. Spoon down center. Top with cheese. Microwave, uncovered 2 to 3 minutes. Serves 4. Freezes well.

Since microwave ovens vary in power, you may need to adjust your cooking time.
