STIR - FRY BEEF WITH SAUCE 
2 tbsp. peanut oil
1 clove garlic
1/2 slice ginger, minced
1/4 tsp. salt
1/2 lb. flank steak
1 tsp. light soy
1 tsp. sugar
2 tbsp. sherry
1 tbsp. water
1 tbsp. cornstarch
1 tbsp. heavy soy
1 c. soup stock
2 scallions, sliced

Slice flank steak thin. Mix garlic, ginger and salt; set aside. Mix light soy, sugar and sherry; set aside. Mix water, cornstarch, heavy soy and soup stock; set aside. Stir well before use.

Cooking: Put peanut oil in very hot skillet. Add garlic mixture; stir fry 15 seconds. Add flank steak; stir fry 1 minute. Add light soy mixture; stir fry 1 minute. Add cornstarch mixture slowly; stir fry until heated through. Garnish with scallions.
