VEGETABLE SANDWICH 
1 (8 oz.) pkg. cream cheese
1/4 c. chopped celery
1/4 c. grated cucumber
3/4 c. carrots
1/4 c. chopped bell peppers
1 lg. onion, chopped or grated
1 tbsp. lemon juice
Mayonnaise to taste

Grate cucumber, let set. Squeeze out all juice, use pulp, add other ingredients; blend well.
