BARB OVERALL'S ZUCCHINI BREAD | |
1 c. oil 2 c. sugar 3 eggs 3 tsp. vanilla 2 c. shredded zucchini 3 c. flour 1 tsp. baking soda 1 tsp. salt 3 tsp. cinnamon 1/4 tsp. baking powder 1 c. chopped nuts Flour, I used 2 cups of white and 1 cup whole wheat, 1/4 cup oat bran. Combine oil, sugar, and eggs in a large mixing bowl. Beat well. Blend in zucchini and vanilla. Sift dry ingredients together, add to oil mixture and blend well. Pour batter into two (8x4x3 inch) loaf pans that are well greased and floured. Bake approximately 1 hour or until done at 350 degrees. I also added 1 cup of chopped dates and 1/2 cup raisins. CRUMB CRUST: 2/3 c. Quaker oats, uncooked (quick or old fashioned) 2/3 c. packed brown sugar 1/2 c. chopped nuts 1/4 c. melted butter 1/2 tsp. cinnamon Mix above together and top on bread prior to baking. |
