CORNY CORNBREAD COFFEE CAKE 
1 1/2 c. self-rising flour
1 c. granulated sugar
1 c. light brown sugar, firmly packed
1 c. vegetable oil
1 tsp. vanilla
4 eggs
1 c. chopped nuts (I use pecans)
Cool Whip

Grease and flour 9 x 13 inch baking pan. Preheat oven to 350 degrees. Sift flour. Mix with granulated sugar and brown sugar. Add oil, vanilla and eggs. Mix well. Add nuts. Bake at 350 degrees for 40 minutes. May be served as a dessert with a splash of Cool Whip.
