QUICK RED BEANS AND RICE 
1 can red kidney beans
1 coconut
2 cloves garlic, crushed
3 stalks green onions
1 lg. sprig thyme
3 pimento
1 hot pepper
1 c. rice (uncooked)

Crack open coconut and remove from shell. Dice and place in blender with water to cover. Blend until well grated. Strain and keep liquid. Throw coconut husk away. Add coconut milk liquid to rice (about 3 cups). Add seasonings. Bring to boil. Mix well. Turn heat to low, cover, cook until rice is cooked.
