SWEET POTATO PUFF 
2 c. mashed sweet potato
2 tbsp. butter
1 egg
Salt and pepper
1/4 c. milk

To mashed sweet potato add the melted butter, seasonings to taste and milk. Separate the egg. Beat egg yolk and add to potato mixture. Beat the egg white until very stiff and fold into potato mixture. Put into a baking dish or individual molds. Set in a pan of hot water and bake at 375 degrees until puffed and brown. Cover top with marshmallows and bake just until slightly melted and browned.
