ORANGE SPONGE CAKE 
1 1/4 c. cake flour
1 1/4 tsp. baking powder
1/4 tsp. salt
4 eggs, separated
1 1/4 c. sugar
Rind of 1 orange
2/3 c. orange juice

Beat egg yolks until thick. Gradually beat in 3/4 cup sugar, then orange rind. Beat egg whites until foamy. Beat in 3/4 cup sugar gradually until stiff peaks. To yolk mixture, add flour mixture and orange twice with a spoon until well mixed. Fold into egg whites. bake at 325 degrees for 1 hour.
