ROLLED STUFFED MEAT LOAF 
2 lbs. ground beef
1/2 c. milk
1 1/2 c. bread crumbs (3 slices soft)
2 tsp. salt
1/2 c. chopped onion
2 eggs, beaten
1 (4 oz.) can chopped mushrooms
1 tbsp. chopped onion
2 tbsp. butter
1/2 tsp. poultry seasoning
1/4 tsp. salt
1 tbsp. chopped parsley
Optional: 1 1/2 c. bread crumbs and cheese

Mix beef, milk, bread crumbs, salt, onion and egg together. Place on 9 x 12 inch piece of tin foil and flatten.

Saute stuffing - mushrooms, onion, butter, poultry seasoning, salt, parsley and bread crumbs. Mix well and spread on center of meat.

Cheese can be added with stuffing if desired. Roll meat over the stuffing into a tube shape. Press edges together good. Place in 9 x 13 inch pan. Bake at 350 degrees for 1 1/2 hours. Cover with tin foil. Open tin foil for last 15 minutes.
