CHORIZO STUFFED SWEET POTATO | |
Simple, healthy and yummy! The chorizo spicyness is cut by the sweetness of the potato and butter. 2 large sweet potatoes 2 tbsp. butter, divided 1 large chorizo sausage (I use Trader Joe's brand) 4 tbsp. Queso Fresco cheese, divided Preheat oven to 375°F. Pierce both potatoes and wrap in tin foil with 1 tablespoon each butter at top of potato. Roast at 375°F until tender, about 1 hour. Remove sausage from casing, place into medium fry pan and brown slightly. To assemble, place each potato on a plate. Slit down the middle, mash open just a little with a fork, and divide the sausage equally between both potatoes. Crumble 2 tablespoons each cheese over sausage. Note: Any remaining melted butter from the tin foil can be drizzled over top. Makes 2 servings. Submitted by: Rebecca Webb |
